This salmon burger with chives and red pepper is delicious in combination with the creamy avocado

Ingredients

250 to 300 gr fresh salmon
1 outing
1 red pepper (or half)
zest and juice of 1 lemon
fresh chives
handful of lettuce
2 tablespoons halvanaise
2 tablespoons (greek) yogurt
1 avocado
pepper and salt
20 g bread crumbs

Preparation

Roughly chop the salmon and place in a food processor. Add the coarsely chopped onion, lemon juice and zest, chives, pepper, salt and red pepper. Grind the mixture fine. Add breadcrumbs to the mixture until it feels firm enough to make burgers. Form 2 nice burgers from the salmon mixture with your hands or a burger press.

Heat a frying pan and fry the salmon burgers for about 8 minutes on medium heat until light brown (do not fry them too long because then they will become dry). Mix the halvanaise and yogurt together. Cut the avocado in half, remove the skin and pit and cut into wedges. Spread some lettuce on a plate. Place the salmon burger on top and place the avocado wedges on top. Spoon some of the yogurt dressing on top and garnish with a pinch of pepper and some chives. Serve as a main course with some rice or potatoes.
