Summer salad with sweet strawberries and goat cheese balls with pistachios
Ingredients
200 g lamb’s lettuce/iceberg lettuce or other lettuce
200 g soft goat cheese
50 g pistachio nuts, finely chopped
250 gr strawberries
2 tbsp olive oil
1 tbsp honey
pinch of black pepper
1 tbsp lemon juice
Preparation
Roll small balls of the goat cheese and roll them in the pistachios. Put them in the fridge. Wash the strawberries and cut into quarters.






In a small bowl, whisk together the olive oil, honey, lemon juice and some black pepper. Pour the dressing over the salad and add the strawberries. Toss the salad well and scoop onto a plate or bowls and serve the goat cheese balls on top.
