Quick ravioli caprese

A delicious Italian salad on the table in 10 minutes with stuffed ravioli, tomatoes, mozzarella and pine nuts


2 x pack of ravioli or 250 grams (filled with eg cheese)
150 g lamb’s lettuce
250 gr cherry tomatoes
250 gr mozzarella balls or orrecchiette
50 g pine nuts
3 tbsp basil olive oil
black pepper
Optional: fresh basil leaves


Cut the tomatoes in half and drain the mozzarella. Cook the ravioli according to the package, drain well and mix with the lettuce, tomatoes, mozzarella and pine nuts. Drizzle with the basil olive oil and sprinkle with some black pepper. Sprinkle some fresh basil on top, if desired. 
Also delicious in smaller portions for lunch.
