Ice cold and healthy(er) snack with a tasty muesli base with a layer of yogurt and fruit.
Preparation
Mix the muesli, dates, pecans, coconut oil and a pinch of cinnamon in the food processor. Line the bowl with foil and spread the muesli mixture over the bottom and press down with a spoon.
Mix the honey with the yogurt. Keep a few raspberries and blueberries aside and mash the rest coarsely with a fork, for example. Spoon this briefly through the yogurt and divide over the muesli base. Garnish the top with the remaining raspberries and berries.
Place the dish in the freezer for about 4 hours. Remove from freezer a few minutes before eating and cut into bars.
Tip: by using Greek yogurt with 10% fat you get a creamier result. If you use the one with 0% fat, that’s also possible, but the topping will be a little harder.
