BBQ quesadillas

Must Try

Try these Mexican wraps with spinach, mango and goat cheese from the barbecue

8 small tortilla wraps
1 mango
300 gr fresh spinach
125 gr fresh goat cheese
Salt and pepper
Splash of olive oil
Aluminum foil

Brush the tortillas on both sides with a little olive oil. Heat a little olive oil in a large (wok) pan and fry the spinach until it has wilted. Sprinkle with a little salt and pepper and toss well. Drain the spinach in a sieve or colander and press out the liquid with a spoon. Finely chop the green sauce that is left over and divide between 4 tortillas. Peel the mango and cut into small pieces and divide over the tortillas together with the goat cheese. Cover the quesadillas with the other 4 wraps and wrap in aluminum foil. Grill the parcels on the BBQ for about 3 minutes on both sides. The baking time depends very much on how hot the bbq is, so keep an eye on it, if you don’t see any brown stripes on the wrap after baking for 3 minutes, put them back for a while. Not nice weather outside? Then you can also fry them for 5 minutes in a frying pan.
