Vegetarian crispy wraps with a homemade yogurt-garlic sauce, inspired by Greek cuisine


For the sauce


 First make the sauce by very finely chopping the garlic clove and stirring it into the Greek yogurt together with some salt and pepper, a pinch of parsley and the lemon juice. Cut the onion, olives, aubergine and courgette into small pieces and combine everything in a bowl. Fry the vegetable mixture briefly in a pan.

 Heat a little olive oil in a frying pan and put a wrap in it. Spread some spinach over half of the wrap and then a layer of the vegetable mixture. Crumble some feta over it and then fold it in half. Bake the wrap until it is nicely browned and then turn it over so that the other side can also bake for a few minutes. Remove the quesadilla from the pan and cut it in half. Serve with the homemade yogurt-garlic sauce.
