Mix the oil with lemon juice, thyme and a pinch of salt and pepper. Divide the lettuce between plates or bowls. Cut the beets into wedges and place on top of the salad.
Cut the apple into thin slices and also divide on and between the salad. Crumble over the feta and walnuts and drizzle with the thyme dressing.
Tip: also replace the feta with goat cheese
