These zucchini boats are filled with pizza toppings such as mozzarella and salami, ideal as a light meal or tasty lunch



 Heat the oven to 200 degrees. Half the courgettes lengthwise and remove the seeds with a spoon. Divide the pizza sauce over the 4 zucchini halves. Cut the salami slices into smaller pieces and divide them over the courgettes.

 Also divide the grated mozzarella and Italian herbs on top. Bake the courgettes for about 20 minutes or until the cheese starts to colour. Divide the arugula over the pizza zucchini when they are out of the oven.
