These delicious cauliflower cookies are delicious as lunch or side dish and ideal for kids to get extra vegetables



 You can buy cauliflower rice ready-made, but you can also make it yourself by grinding cauliflower florets in a food processor. Boil the cauliflower rice in a pan with water for 1 to 2 minutes and drain well. Add the grated cheese and the eggs. Season with some finely chopped chives, cumin, pepper, salt and crush the garlic. Then add the flour little by little until you have a firm batter. Heat a layer of sunflower oil in a pan and spoon in 3 scoops of the cauliflower batter and flatten slightly. Bake for about 3 minutes until golden brown and then bake the other side as well. Serve the cauliflower fritters with some sour cream.
