Rinse the chickpeas clean.
Wash the sweet potato well (peel if necessary) and cut into coarse pieces. Do the same with the onion and eggplant.

Place the traybake in the oven for 25 minutes at 180°C.
Serve with fresh parsley, some extra olive oil and lemon juice.
