Banh mi (Vietnamese sandwich) with tempeh

Must Try

Tasty vegetarian version on the well-known Asian sandwich with crispy and marinated tempeh, sour vegetables and a tasty sauce.

Cut the tempeh into about 16 thin slices. Place this in a bowl. Mix the soy sauce, ginger, sesame oil and sugar together and pour this over the tempeh slices and let it marinate for about 30 minutes (or longer).
Meanwhile, cut the cucumber into thin slices and put them in a bowl together with the carrot julienne.
Squeeze the juice from the lime and mix with the white wine vinegar and sugar. Pour this over the cucumber and carrot and mix together.
For the sauce, mix the mayonnaise with the chili and the juice of the lime. Heat a frying pan and fry the tempeh slices until slightly crispy for about 8 minutes over medium to high heat.
Cut the buns almost completely in half and top the buns with some of the sour cucumber and carrot. Place a few slices of tempeh on top and divide some sauce over it. Top it off with some fresh coriander.
Tips: You could also grate a carrot or carrots instead of julienne carrots.
