Preheat the oven to 180 degrees. Place the dates in a bowl (pitted if necessary) and soak them in hot water for a few minutes. In a large bowl, mix the whole wheat flour with the baking powder, cinnamon, gingerbread spices and a pinch of salt.
Drain the water from the dates and place in a food processor or blender, along with the milk, eggs, apple syrup and vanilla extract. Mix well so that everything is well blended. Add the wet mixture to the bowl of flour and stir with a whisk until smooth.
Place baking paper in a baking tin and pour in the batter. Divide the almond shavings over the gingerbread and put in the oven for about 30 minutes. Check with a skewer if it is cooked.
