Preheat the oven to 175 degrees. Cut the apricots into small pieces and mash the banana with a fork. Add both to the oatmeal, along with a teaspoon of cinnamon. Chop the nuts finely and add. Finally, add the pumpkin seeds, honey and melted coconut oil or butter.

 Mix and knead it into a whole. Now form 8 biscuits from the dough and place them on a sheet of baking paper. Bake the cookies for 12 minutes and flip them halfway through. Serve the cookies with a little Greek yogurt.

 TIP: use nuts that you like or have left over, the type doesn’t matter much for this recipe.
