Recipe toast with spinach scrambled eggs and smoothie


2 slices Korenlanders Rustic Bread
3 eggs
2 tablespoons grated cheese
100 gr fresh spinach
Fresh chives
Salt and pepper Splash of
4 cherry tomatoes
2 slices Blonde d’Aquitaine roast beef

300 ml fresh orange juice
1 banana
1 lime
100 ml yogurt
Handful of raspberries


Heat a frying pan without oil or butter and toast the bread for a few minutes until it starts to get slightly crispy. Meanwhile, beat the eggs with the cream, chopped chives, grated cheese and a pinch of salt and pepper.

Remove the bread from the pan and heat a little oil or butter and let the spinach wilt slightly. Then add the egg mixture and stir gently with a spatula. Fry this for a few minutes while occasionally stirring the hardened egg. Spoon the scrambled eggs on the slices of bread and divide the slices of roast beef and some cherry tomatoes cut into wedges.

For the smoothie, put the fresh orange juice in a blender. Add the banana, handful of raspberries, juice of 1 lime and yogurt and blend well. Nice with a cup of coffee or tea.


  • Reduce the heat to low, the egg should set slowly for best results.
  • Use a wooden or rubber spatula, not a fork, to stir the egg. Do not stir too fanatically, but let the egg set for a while and then stir.
  • You can also make scrambled eggs with milk, but personally I think whipped cream or cooking cream give a slightly fuller taste.
