Preparation

 Bring a pan of water to the boil and place the eggs in it. Boil them for 12 minutes. Drain the eggs and shock them in cold water. Let them cool. Peel the avocado, remove the pit and mash it finely. Peel the eggs and cut them into pieces.

 Add this to the avocado along with some lemon juice, pepper and salt. Stir everything well together. Cut open the sandwiches, top them with arugula, a generous layer of egg salad and finish with some cress.
