This easy basic frittata is vegetarian, low carb and you can make it in the oven or on the stove.



Preheat the oven to 200 degrees.
Break the eggs into a bowl, add the yogurt or crème frache and stir together with a pinch of pepper, salt, cheese and oregano.
Chop the zucchini into small cubes and cut the dried tomatoes into pieces. Heat a little oil or margarine in an ovenproof pan. You can also use a regular frying pan and cook the frittata with the lid on the pan. Another option is to fry the vegetables first and then put everything in a baking dish and then put it in the oven.
Fry the cubes of zucchini and after a few minutes add the dried tomatoes. Spread everything evenly over the pan.
Then pour the egg mixture over it and bake the bottom for a few minutes and then put the pan in the oven at 200 degrees for 25 minutes. When the frittata is well set, cut it into wedges.
Eat this frittata for lunch or dinner with a salad and/or some soup.
Tip: also try the other recipes such as frittata with chicken and pointed pepper or frittata with spinach and chorizo . Or experiment yourself by substituting the zucchini and dried tomatoes for other ingredients.
Tip: Parmesan cheese contains animal rennet, so this recipe is not 100% vegetarian. Replace the cheese with an old or matured cheese with vegetarian rennet or try a vegan cheese.
