Delicious spicy aubergines from the oven served with fresh yogurt and pomegranate seeds

Preparation

Heat the oven to 200 degrees. Cut the aubergines in half. Score them with a sharp knife to create diamonds. Place them in a baking dish and brush with oil. Sprinkle with a pinch of cumin, cinnamon, salt and pepper. Bake them in the oven for about 40 minutes with the top side up.

Mix the Greek yogurt with the lemon juice and honey. Remove the aubergines from the oven. Generously brush the top with the yogurt mixture. Sprinkle with pomegranate seeds, mint and optionally an extra pinch of cinnamon.

Tip: serve the aubergines with yogurt and pomegranate seeds with, for example, a delicious couscous salad.
