Meanwhile, cut the bell pepper into thin strips and tear the mozzarella into small pieces. Remove the aubergines from the oven and brush the top with pizza sauce. Top with bell pepper, pesto, mozzarella and basil. Bake the aubergine pizzas for another 20 minutes in the oven, if necessary turn on the grill for the last few minutes for an extra crispy crust.
