Mash the bananas as finely as possible with a fork. Beat in the eggs and cinnamon with a fork. Heat a little butter in a frying pan and put some batter in it.

I have always baked 3 small pancakes at a time, but you can also make a large pancake. Wait until the pancakes start to set and brown on the bottom and bubbles appear on the top.

Carefully turn them over with a spatula and brown the other side as well. Garnish with some honey, syrup and possibly some fruit.

Tip: if you want to make them a bit more filling, you can also add some oatmeal to the batter, they are no longer gluten-free.

You can keep them covered in the fridge for 2 days or freeze them.
